Looking for a comforting, nutrient-packed meal that’s both delicious and alkaline-friendly? This chickpea alkaline stew is a game-changer! Simmered with fresh vegetables, aromatic herbs, and rich alkaline spices, this stew is as healing as it is flavorful. With hearty chickpeas, tender bell peppers, and a hint of thyme every bite is a warm embrace for your body and soul. Plus, it’s easy to make and perfect for meal prep!
Here's a favorite recipe of ours that we must share with you all:
Channa (chickpeas) stew
Ingredients:
1 or 2 large cans of Goya chick peas
- Alternate: 1 bag of dried check peas (soak overnight)
- 1 red pepper
- 1 yellow pepper
- 1 green pepper
- 1 purple/red onion
- 1 scallion or wild garlic
- Thyme
Spices: (1-2 tbsp of each)
- Sea salt
- Oregano
- Parsley
- Cilantro
- Cayenne pepper
- Ginger
- All spice
- Basil
Your choice of: Avocado, grapeseed or coconut oil
- Dice or slice the peppers, onion, and other seasonings.
- If using canned or soaked overnight chick peas, strain the water and place in a large bowl.
- Add about 1-2tbsp of oil to a medium to large sized pan and bring to a medium heat. Grab a few pieces of onion and dice pepper then drop it in the pan allowing it to caramelize for 2-4mins.
- Then, add all of the diced seasoning to the pan along with 1-2 tsp of each spice listed above and then stir. Cover the pan and allow the seasonings to caramelize for about 3-6 minutes.
- Next grab the strained chick peas and add to the pan. Mix well so that the seasoning saturates the chick peas. Get your spices again to add 1-2tsp of each spice and mix well.
- Then cover your pan allowing the stew to cook for about 3-6 minutes. Stir the stew, add 1/2 cup of spring water, mix well, and cover the pan. Reduce fire to low heat and allow stew to simmer for about 3-6 minutes.
- Don’t forget to taste it along the way feel free to add more or less spices depending on your taste buds.
- Now you’re ready to share and enjoy your channa stew
Extras:
You can also add other veggies like zucchini, squash, or amaranth. Another fun add on to this recipe can be using mushrooms like baby Bella, king trumpet, and/or oyster mushroom, too. Annnndddd… If you like curries, simply use 1-2tbsp of curry or turmeric powder when adding the seasonings to the pan before adding the chick peas.
